What is freezer burn?

What is freezer burn?

When frozen foods develop dry, white or brownish spots around the edges - known as freezer or frost burn - it is usually because the food's packaging was either not airtight or was too large. The food has not actually gone off, but it is inedible. This kind of damage occurs mostly with frozen food with a high water content - such as meat and vegetables - when the surface of the food comes into contact with air. The frozen fluid turns into its gaseous stat and escapes. The flavourings and nutrients. As they thaw, the dried-up spots absorb very little water, which leaves them tough.
